Bright, citrusy Mezcal from Puebla in central Mexico. The producers distil three different agaves to make Ensamble – Papalote, Espadín and Tobalá – all of which are roasted in underground ovens, fermented in the open air, and distilled using traditional copper pot stills. Expect layers of cooked agave, smoke and spice.
